Avocado, Egg, and Bacon Toast

 
I'm not much of a breakfast person. Mostly, I don't like having to make something in the morning and most quick and easy things are full of sugar or tons of grease!

Confession: In high school, I attended an early morning Bible study class and I had to get up at 5:30 AM!! Needless to say, I was never very much in the mood to eat before I had to leave the house at that early hour, so for a while, I would take a Slim Fast shake with me 😝. I didn't know then what I know now and how much artificial junk they have in them. But anyway, just illustrates my not being a breakfast person.

Fast forward to today and I understand how important breakfast is and how starting your day with protein and a healthy fat is important for sustained energy, mood, and clarity of mind. So I know I need to have something good, but I don't want to take the time. #thestruggleisreal ;) But this is fairly quick and totally filling!

This is totally an un-recipe, but it was so good I had to share the idea.

Start with a piece of whole wheat bread and toast it. Smash a couple slices of avocado on it.


Add some piees of cooked turkey back, trimmed to fit the size of the bread.

Fry an egg and add to the top of the pile. Season with salt and pepper.

Lastly, enjoy!

Rainbow Veggies and Sausage



I have a favorite recipe that my family really enjoys but lately I've been wanting to cut back on all the cheese in it. I don't get sick or anything, it just tends to weigh me down.

So I did some playing around with it and found a very yummy and healthier version.

First start with olive oil and 2 or so cloves of garlic. (If you like a little heat, you could even throw in some red pepper flakes) Cook the garlic for about a minute then add lots of veg...peppers of all colors (I don't discriminate), zucchini, onion, tomato (not pictured - add later). 

Then some super yummy chicken sausage. This Italian style one went really well.

Chop the sausage and cook in a wok or skillet until cooked through. Remove from the pan and add the veggies. Stir fry those until tender.

Remove from heat and combine together and season with salt, pepper, and Italian seasoning. Add chopped tomatoes.

Optional: add cooked pasta and sprinkle with a tiny bit of Parmesan cheese. I did this to make sure it was filling and there was enough for my whole crew, but the sausage and veggies were super yummy all on their own.

It was super yummy and the kids loved it!

Dusting off this little ole blog


Wow, life is just exciting isn't it?!
 I started to type up all the craziness that life has been over the last year or so and then figured, who cares? Everyone has their stuff, but something had to give and blogging for me was one of those things. And I have missed it terribly!
 

The dust has settled, for the most part, and I'm needing my creative outlet again! I miss the creativity and projects, the tribe, meeting new friends, helping and reaching readers, and I miss blog conferences (although I've only ever been to one)!

I find myself typing out posts in my head, things I want to get out there, even if no one only 5 people read it. haha 

So I guess I'm just saying, I'm coming back.

It may not be on a super regular basis, but I want to create, take pictures, and write. The picture above is the first time I've pulled out my 'big' camera in nearly a year! It felt awesome!
