Family Pleasing Taco Soup

When I had my first son, a friend brought us this dish for dinner and it has been a hit ever since. I made it last night and it made me so happy to see my son devour it. He can be such a picky eater so eating two huge bowls for dinner and again for lunch today was such a success! 

I vary how I make this from time to time, but almost always double it to have left overs. Since it has both beans and corn, which make up a complete protein, you don't necessarily need ground beef/turkey, but my husband loves meat so sometimes I'll make it with the meat. 

Taco Soup
1 lb ground beef/turkey
1 package taco seasoning
1 (16oz) can cut corn
1 (16oz) can kidney or black beans
1 (28oz) can stewed tomatoes
1 (8oz) can tomato sauce

Optional Mix Ins:
Tortilla chips/ Fritos
Grated Cheese
Sour Cream

Brown beef/turkey in a heavy saucepan, drain. Stir in taco seasoning, corn, beans, tomatoes, and tomato sauce. Simmer for 20 to 30 minutes. If you like the beans to be a bit softer, throw it in the crockpot for a few hours on high. 



And just as a side note, I'm working on a post about what I've been up to. My dad came to visit and helped me with a building project so I'm really excited about sharing that with you. It is just taking a while to write, but I'm working on it!!

Please excuse my absense...

Well it has been a busy/rough 2 weeks. Last week we kept busy. I celebrated my birthday, which was fun albeit very uneventful. Then I had all sorts of meetings and activities for various church things. I finally got my scruffy haired wild man to the hair dresser for a cut. Boy does it look soooo much better!



















Unfortunately this week we've been sick. We all picked up a cold somewhere and have been pretty tired and lazy. 

Thank goodness for a three day weekend. I'm really hoping to get some stuff done. Normally this is busy season for my husband so he'd still have to work, but he's caught up enough that he gets to take it off! yeah! I have several unfinished projects I want to get done.

Craft From the Past: Mom Heart Shirt

I'm working on some things on my to do list, but none are quite done yet. We recently moved our littlest cub to his room (he was in a bassinet in our closet). Now with that room freed up in our closet I'm rearranging things and sending a bunch to charity. 

Today I'll share one of my favorite crafts from the past. The 'Mom' shirt I made for my oldest is perfect for my little Valentine. 
I'm sorry I don't have a tutorial for it, but basically I just cut out the felt and hand stitched it on. You can print out the shapes off from Microsoft Word and cut them out to use as a pattern on the felt. Then just sew in layers; the heart first, the banner, and then the letters.

I've put this shirt on each of my kids. It's so cute to see pictures of them at the same age side by side.
